Prepare the chicken by cleaning it thoroughly, then wash it under cold water. Place the cleaned chicken pieces into a mixing bowl. Add salt, white pepper, and green seasoning to the bowl. Ensure that the seasonings are evenly distributed over the chicken pieces. Once combined, cover the bowl with a lid or plastic wrap to seal in the flavors, and allow the chicken to marinate for at least 1 hour.
Roast the chicken in an Air fryer or oven by 180℃ for about 30 minutes.
While the chicken are roasting, pour the oil into the pot, then the chopped onion and simmer for about a minute.
Add the chopped tomato to the pot and cook over low heat for about 5 minutes. Remember to stir the mixture regularly or it could burn.
When the tomato is cooked, add the green beans, let it simmer for a few minutes, then add the chopped carrots. Let the mixture cook for about 5 minutes.
Add the green seasoning, curry powder, salt, and the roasted chicken. Let them cook until the vegetables are soft and tender. Taste it and add salt if needed. The meal is ready and can be served with roasted potatoes, fried plantains, or any other side dish.
