This healthy Green Lentils stew is a great choice for a meat-free day. This stew is not just tasty, but also full of vitamins and nutrients. It can be eaten alone, with rice or any side dish of your choice.
Green Lentils stew is similar to my Beans stew recipe. This stew is mainly made with green lentils, some mixed vegetables have been added to it, but this is optional. The stew is seasoned with some of my favourites ingredients: white pepper of Penja, spring onions, garlic, ginger, country onions, African nutmeg and fruit 4 sides.
Green Lentils Stew
Ingredients
- 500 g green lentils
- 1 big onion
- 3 spring onions
- 400 g chopped tomatoes
- 1 tsp white pepper
- 6 garlic cloves
- 10 g ginger
- 2 country onions
- 1 Pebe/African nutmeg
- 1 tsp fruit 4 sides/Esese/4 cotes
- 1 bay leaves
- 2 bell peppers optional
- salt to taste
- oil to taste
- 1 habanero pepper/hot pepper optional
Instructions
- Put the lentils into a small pot with water and let it boil for about 10 minutes
- Pour the oil into the pot, then the chopped onion, simmer for about a minute.
- Add the chopped tomato into the pot and cook over low heat for about 5 minutes. Remember to stir the mixture regularly or it could burn.
- When the tomato is cooked, add salt and the blended mixture of spring onions, garlic, ginger, white pepper, country onion, African nutmeg and Esese. Stir and add water. let the mixture cook for about 5 mins.
- Add the precooked lentils, bell peppers and bay leave. Cover the pot and let it cook for about 10 minutes. Remember to check the pot regularly.
- Add more water if necessary to your taste. Taste the sauce, if it is not salty enough, add a little salt;
- The meal is ready, you can eat it alone, with rice or another side dish of your choice. Enjoy!
