Coconut Fried Rice is a mixture of coconut-flavored cooked rice with chicken and vegetables. In the end, you get a combination of beautiful colors, wonderful taste, and a pleasant smell.
How is the Coconut Fried Rice cooked?
The cooking process can be divided into three parts: cooking the chicken, cooking the rice, and mixing all the ingredients.
Preparing the chicken
For this recipe, I start by preparing the chicken. First, I clean the chicken by removing all the skin and washing them. Then I add salt, white and black pepper, and my spice mixture; I combine them all together. The spice I use in this recipe is a mixture of basic spices I use in most of my recipes. You can find the recipe for that spice mixture here. Then, I let the chicken marinate for at least 2 hours.
After marinating the chicken, you can either roast or fried the chicken. If you choose to roast, you just need to place the chicken in a baking tray, spray oil over it, and place it in the oven. Bake it at 200℃ until well cooked from the inside out. If you choose to fry the chicken instead, you need to boil it first until soft and tender. Then you need to heat the oil in a pan and deep fry the chicken.
Cooking the rice
While you are preparing the chicken, you can also start cooking the rice. You need water and coconut milk to cook the rice. To give a taste to the rice add salt, curry leaves (optional), and bay leaves.
Mixing all the ingredients

Coconut Fried Rice with vegetables
Ingredients
Cooking the meat
- 1 kg chicken
- salt to taste
- 1 tsp black pepper
- 2 tbsp green seasoning recipe available in this blog
Cooking the rice
- 1 tbsp coconut oil
- 5 cups Basmati rice
- 1 cup water
- 2 bay leaves
- 1 tsp curry leaves
- 1 can coconut milk
- salt to taste
Mixing vegetables and cooked rice
- 3/4 cup oil
- 2 onions
- 3 fresh tomatoes
- 3 tbsp green seasoning
- 1 tsp curry powder
- 1 tsp white/black pepper
- 500 g mixed vegetables
- 1 tbsp tomato paste
Instructions
Preparing the meat
- Remove the skin from the chicken and wash it. Add salt, black pepper, and green seasoning to the chicken. Combine them well and let marinate for at least 2 hours.
- Now, you can either roast or fry the chicken. If you choose to roast, you just need to place the chicken in a baking tray, spray oil over it, and place it in the oven. Bake it at 200℃ until well cooked from inside out.
- If you choose to fry the chicken, you need to boil it first until soft and tender. Then you need to heat the oil in a pan and deep fry the chicken.
Cooking the rice
- Pour water into a pot together with coconut milk, and add the washed rice to the water. Then add salt, curry leaves, coconut oil, and bay leaves.
- Cook the mixture on medium heat. From time to time open the pot and check if you need to add more water. Monitor the cooking, and make sure the rice is not overcooked, it should be fluffy. When done remove from the heat and set it aside.
Mixing vegetables and cooked rice
- Heat oil in a big pot on medium heat. Add onion, and simmer for about a minute. Then add chopped tomato, tomato paste, and salt. Stir and let it simmer for a while.
- Add the green seasoning, mixed vegetables, black pepper, and curry powder. Combine all together, add a small amount of water or stock (about 100ml).
- Let the mixture cook under low heat until the vegetables are cooked. Remember to stir regularly.
- Taste the mixture to see if you need to add more salt or pepper. Then add the cooked rice and combine them well altogether. It is ready to be served with the chicken.
